Last days in pastry

Hola! Hi! Finally, we have days off and can rest after really hard week. This week was my last one in pastry. From next week I will move to starters to learn more and more. My chef Renzo was so sad to know that I am moving and he was so kind to give me a gift (tweezer and little ceramic knife so that I need in starters).

One more thing that I did not say about pastry is special dessert Minardices.

It contains bonbons, financier, teja de naranja, melon infusion, butter crunch, aerated chocolate.
Another thing is cocktail that we are doing in the beginning of the service. It is so interesting, it is not simple cocktail, it has really nice plate (bottle of champagne in a cut). So we pet ice inside, then on ice we pet melon with fizzy, frozen strawberries and zest of lime and orange.
So, also should be said that each day work we are finishing by five-minute discussing about the next day.
Now I am sending video from our last party from boat.
