Just feel the moment and love my job
Hello again from paradise.
Each time I am happy to realize that I have my internship in one of the best islands in Atlantic Ocean, in one of the best resorts in the world, in one of the best Michelin restaurants in Spain. These reasons are giving me energy and desire to keep going what I am doing and never think that is something wrong in my life. I am happy to feel that kitchen and team working there is not only the job but it is my life and part of my family. And long and hard hours do not have matter when you feel that you are in the right way and feel the balanсed rhythm of life.
By the way, it is a pity that time is ruthless and fleeting and three months have passed of my internship. To be honest, in the beginning, I wanted it finished as fast as possible but now I want time to be slow as possible because I caught all beauty of what is happening with me.
Well, enough philosophy, let's talk specifically about my tasks during mise en plance in fish section.
So, my commis chef and I have one list of tasks which we divide by two of us but each of us knows how to do everything from this list. So, we are helping each other and working like a team.
My list:
Mayonnaise and minсed vegetables (red, yellow and spicy pepper, pickled cucumber and onion).
Eel tacos.
Tortitas.
Tempura.
Teja.
Slice bacon.
Peel, cut and slice asparagus (and then during service do bouquets with orange zest, sugar and spices).
Blanch separate leaves of brussel sprouts.
Chips of artichoke and kale.
Artichoke cream.
Tortillas cream with potatoes and onions.
Reduced orange juice.
And during service when there are not a lot of people my chef giving me great opportunity to do service on my own when there are a lot of people we are working together with commis chef. It is hard to believe how they trust me but it is true. Itself is shocked.
P. S. It's a pity that it is forbidden to do pictures during work and I cannot show the reality how it looks like. And next week will be the last one before the restaurant will be closed for holidays and we will go to work to another but about it in next blog. See you!
